Reversing Diabetes: April 23, 2020

I’ve been eating 97% plant-based for 115 days. Naturally, I had no idea the Covid-19 would strike in the middle of my journey but I am grateful that I had already begun. Food is easy. Dr. Furhman’s G-BOMBS regimen (Greens, Beans, Onions, Mushrooms, Berries & Seeds) are easily
obtained, stored and prepared. As back up for fresh green smoothies, I’ve assembled dried kale, dried almond milk, dried berries (no sugar added) and pea protein powder. Add water and ice, voila!

I am planning ahead for our trip to Colorado when we get to take it. I feel it will be a long time but it’s been fun to dream of it. We have a No Bo RV that is tiny, equipped with solar for our off grid fav places. Packing has to be super efficient. Discovering the dried ingredients for smoothies cuts storage needs by 2/3s. Beans, dried Crimini mushrooms, onions, sunflower and chia seeds take little room and no refrigeration. Organic vegetable broth in powdered form is a perfect solution for soups, veggie rice and pasta prep.

I feel blessed to feel well in this tragic pandemic. None of us knows if we will make it through without contracting the virus but I am hopeful that I’ve improved my immune system enough to survive if I do. I know that diabetics are more vulnerable so I am glad to have my A1C back to normal. Without the plant based program, I would not be so fortunate.
